When adding the caramel to the popcorn and peanuts, work quickly and thoroughly to coat the other ingredients before it hardens.


Popcorn Crunch

  • 6 tablespoons unsalted butter, cut into ½-inch pieces, plus more for pan
  • ½ cup salted roasted peanuts
  • 2 tablespoons light corn syrup

Fudge Sauce and Assembly

  • ¼ cup natural unsweetened cocoa powder
  • 3 tablespoons light corn syrup
  • ¼ cup (½ stick) unsalted butter
  • 1 ounce semisweet chocolate, chopped
  • ½ teaspoon vanilla extract
  • 2 pints dulce de leche ice cream

Recipe Preparation

Popcorn Crunch

  • Coat a rimmed baking sheet with butter; set aside. Combine popcorn and peanuts in a large mixing bowl.

  • Bring sugar, corn syrup, and 2 tablespoons water to boil in a medium saucepan, stirring to dissolve sugar. Add 6 tablespoons butter and stir until melted. Continue cooking, stirring often, until caramel is a deep amber color, 10-12 minutes.

  • Working quickly, pour caramel over popcorn and peanuts and, using a heatproof spatula, mix to coat. Transfer to prepared baking sheet and let cool completely. Break into pieces.

Fudge Sauce and Assembly

  • Whisk sugar, cocoa powder, corn syrup, and 1/4 cup water in a small saucepan until smooth. Bring just to a simmer over medium heat. Remove from heat; mix in butter, chocolate, vanilla, and salt until smooth. Cover to keep warm.

  • Serve ice cream topped with popcorn crunch and fudge sauce.

  • DO AHEAD: Popcorn crunch and fudge sauce can be made 1 week ahead. Store popcorn crunch airtight at room temperature. Cover and chill fudge sauce. Reheat before using.

Scooped: Buttered Popcorn Ice Cream

I'm supposed to say it's stale, low-quality kernels drenched in gross fake butter that causes Alzheimer's or something. That it's way too salty and greasy to enjoy in good conscience.

Sorry, but I love the stuff. I really do.

And I love buttered popcorn jelly beans. And extra-extra butter microwavable popcorn. And I love this ice cream, because corn-flavored ice cream blows the pants off vanilla or chocolate, and butter-flavored corn ice cream may be the only thing that tops it.

Buttered popcorn fans, you know who you are. This ice cream is for you.

I'll admit, when it comes to popcorn, homemade may be best for out-of-hand snacking, but fake butter microwavable popcorn is better for this ice cream. Its hydrogenated butter-flavored oils carry more "buttered popcorn" flavor than real butter, and they freeze less hard and clumpy.

The scoop you see in the photo above is studded with some Cracker Jacks for extra-corny flavor, and while I'm happy to have them in there, I'm calling the addition optional. Despite their sugar coating, the Cracker Jacks collapse and lose their crisp crunch in the ice cream. If you don't mind chewy, ice-cream-softened candied popcorn in your ice cream, the Cracker Jacks are a nice addition. If you're not on board, feel free to leave them out.

Vanilla Sundae with Toffee Popcorn & Toffee Sauce

If there’s toffee sauce left it keeps in the fridge for up to a week.

Step 1

Firstly make the toffee sauce (worth it, trust us!) Gently heat the cream in a small heavy based pan.

Step 2

Don’t let it boil, but when it’s hot and steam is rising from the pan remove from the heat and whisk in the sugar and butter until the sugar is dissolved and the butter melted

Step 3

Finally add the golden syrup and give it a final stir. Allow to cool before using – if it’s too hot the ice cream will melt before you can enjoy your sundae.

Step 4

To make your sundaes, spoon a generous layer of toffee sauce in the bottom of your receptacle, scoop on some vanilla ice cream, as much as you feel like, swirl over some more toffee sauce, whip the cream until floppy and add a dollop, sprinkle with popcorn and chocolate shavings – add a bit more toffee sauce – and dig in!

Top Tip

You can make this in cocktail glasses to look fancy but it tastes equally good in a dessert bowl – anything goes!

The key to an absolutely amazing ice cream sundae is one straightforward rule: Balance. To be a true sundae connoisseur, you will need the perfect combination of tastes and textures, so you can get a little bit of every topping and ingredient in every bite. Too much of one topping means you might miss the rest of the flavors in your bowl, and that’s not what we’re going for! We know you might love one ingredient more than another, but to expertly master the art of a perfect sundae, this rule applies no matter what toppings you choose!

Pro tip! Before you start building your sundae, make sure you have the right bowl – one that can hold your ice cream and all the toppings! You can’t enjoy a sundae if you’re worried about stuff spilling over the sides. Plus, a bigger bowl means you can indulge a little more. (It’s OK – we won’t tell.)

Here’s how we construct a perfect ice cream sundae in six simple steps.

Step 1: A scoop of ice cream

This goes without saying, but you can’t start a sundae without the sweetest foundation. The flavor you choose is up to you – but a couple scoops should be the base layer for your sundae.

Step 2: A drizzle of sauce

If ice cream is the foundation, the sauce you choose – from hot fudge to a seasonal summer compote or classic caramel – is the layer that holds everything together. Sure, you could just throw on any old topping next, but putting your sauce on first helps keep all those other toppings in place. You don’t want so much sauce that you’re overpowering your ice cream base, but this should be a generous drizzle to hold everything else together. You might even choose two options. We like the way you think.

Step 3: A bit of something crunchy

Whether your ice cream is smooth or has lots of extra ingredients, a sundae isn’t complete without a little bit of crunch. Crunchy ingredients come in all varieties – chopped nuts, candy pieces, granola, pretzels, or even popcorn. The crunchy layer makes your sundae a little more special, with a different texture to make each bite a delightful experience. You don’t need to limit yourself to just one crunchy topping, but this layer is definitely a level up you won’t want to skip.

Step 4: A dollop of whipped cream (or whatever)

Whipped cream is the standard sundae option, but we won’t judge if you switch it up. If whipped cream isn’t your scene, try something else equally light and airy – maybe some marshmallow fluff?

Don’t overlook the sprinkles here. If you’re sticking with a decadent chocolate theme, you might choose chocolate sprinkles or shavings.
