How to Make It
Combine olive oil, minced shallots, and chopped sage in a pan over medium-high; cook 2 minutes. Whisk together unsalted chicken stock, apple cider, white wine vinegar, Dijon mustard, maple syrup, and cornstarch; add to pan. Bring to a boil; stir in golden raisins. Reduce heat; whisk 2 minutes. Stir in unsalted butter, pepper, and kosher salt.
