Tiramisu original recipe
For the countertop: Separate the eggs, beat the egg whites with a pinch of salt. We rub the yolks with the sweetener, coffee or essence, milk and cottage cheese. Add the dry ingredients and mix until incorporated. At the end, add the egg whites and mix with the back of a wooden spoon, from bottom to top, slowly so as not to leave the composition. Pour the composition into a cake pan lined with baking paper and bake on low heat for about 35 minutes, until it passes the toothpick test. Let the countertop cool and then cut it in half.
For the cream : Boil the milk with about 3 tablespoons of sweetener. Thicken the yolks with a little milk and add over the boiling milk, stirring until it thickens slightly. After it has cooled, the cream is mixed with cottage cheese.
We syrup with coffee, well the sheets. Spread 1/2 of the cream over the first sheet, place the second sheet and the rest of the cream. Let it cool for at least 2-3 hours after which we powder it with cocoa and we can cut it. Enjoy!
